When It's Harvested
Contract-farmed with staggered sowing across South India. Provisionally preserved in salt brine or SO2 solution, the product holds for extended periods before the industrial buyer applies final processing. Unlike the finished vinegar product, SO2-brined provisional gherkins must be desalted and rinsed before the buyer's own pickling process — this is expected by industrial buyers and built into the product specification. Lead time: 4–6 weeks from order confirmation.

Provisionally preserved (HSN 07114000): gherkins preserved in salt brine or SO2 solution specifically to halt fermentation and extend shelf life for transport — NOT finished product. Industrial buyers (pickle manufacturers, re-packers) import this to process into their own finished pickle products using their own vinegar formulation, flavouring, or brine. Vinegar-pickled (HSN 20011000): our finished retail-ready product. If you are a pickle manufacturer or re-packer, provisionally preserved is your input. If you are a retailer or distributor, you want the finished vinegar product.
The EU permits SO2 as a preservative in provisionally preserved vegetables (E220/E228) at specific maximum levels — typically ≤100mg/kg residual in the drained product after processing by the buyer. USA FDA permits SO2 use in similar intermediate food products. As an intermediate industrial input, the SO2 is expected to be processed out or diluted in the buyer's final pickling process. We provide SO2 residual test results per batch and supply to destination-market specifications.
Standard MOQ: 1×20ft FCL (200kg bulk drums). Payment: 60% advance + 40% against BL copy. Terms improve — 50/50 on second, 40/60 on third. LC at sight for repeat buyers. This is an industrial intermediate — specify your processing setup and SO2/salt brine specification.
